No longer the thin mint

Today I met with my dietitian, and I've finally broken 100 lbs! I'm 100.5 lbs, to be exact. While this might not seem like a great feat, it means I'm finally making headway in gaining the weight I need for baby. I don't feel I look any different, aside from the obvious expanding belly. If I wear a baggy shirt I'm worried people can't tell, though. Then again, sometimes I'm worried that people confuse me for a 16 yr old girl because of my height/weight and they give me the stink eye when they notice my pregnant belly . . . I promise I'm a married career woman.

To keep up my weight gain, I've been instructed to eat large amounts of: peanut butter, greek yogurt, granola, and as many cookies/milkshakes/burgers I want as long as I balance it out with fruits/veggies/whole grains. So, box of thin mints, get ready to be devoured.

We shall cook again and our bellies will rejoice

Well, well, here's another foodie post. Looks like I cook after all. A week or two or three or FOUR ago I made some "Texas-style" stuffed jalapeƱos. They were delicious, but don't make my mistake: wear GLOVES when you slice jalapeƱos. My hands were on fire all night, and the next day. The peppers weren't actually very spicy when we ate them; it was the seed removal that got me. That's where the punch is stored; DO NOT touch the seeds with your bare hands. And, uh, don't accidentally touch your eye afterwards, either.

My own photos this time, that's why they're less than stellar.
Recipe:
5 big peppers, cut in half.
1 package cream cheese
1 cup shredded cheddar cheese
Whatever spices you happen to enjoy
Bacon!

Mix the cheeses & spices, stuff the peppers, top with bacon and bake at 350° for however long it takes to get the bacon nice and crispy. Like 10-15 minutes. Done! Now eat!

Om nom nom nom

So, I usually never bake - EVER. But last weekend Seve and I made apple cup pies! You know, cupcake, cup pie . . . haha. And they came out great!

We never got around to taking pictures, so the images below aren't of the ones I made, but of Amy's from Eggs on Sunday, where you can find her recipe.
